Peach Kefir Smoothie

When it's summertime in North Carolina, you don't always feel like firing up the oven or stove to cook hot food every day. Today was one of those days! This smoothie is so big and contains protein, fiber, and fat, so it could definitely replace breakfast or lunch on a hot day! 

This smoothie was kind of a new thing for me, since I typically avoid consuming this much yogurt in one sitting. A whole cup of yogurt is a lot of dairy, and I've noticed my skin is better without dairy. It's not that I completely avoid dairy so much as I try to minimize it, reserving it more for condiments than basing entire meals around it. 

BUT, Kefir is popping up a lot lately as a kind of "digestion super food" that promotes a healthy gut. Never tried Kefir ("KEE-fur")? HA! ME EITHER! I'm a newbie as well, but in my opinion it's like drinkable yogurt with a bit more kick. It actually has an effervescent quality to it, but it's nice! Like champagne only...well...not.

I like the brand Lifeway and have found it everywhere from Trader Joe's and Whole Foods to Harris Teeter.

1 c. organic plain kefir (I use Lifeway brand)

2 scoops Tera's Whey Organic Bourbon Vanilla whey protein powder

1 c. chopped fresh peaches

1/2  banana

2 Tbs. almond butter

crushed ice


1. Add all ingredients to your blender and blend on high until smooth. Pour into a glass and serve! 

Serves 1 very generously. There is definitely enough to serve two people here!
