Dark Chocolate Peanut Butter Truffles
I don’t know ANYONE who doesn’t love chocolate and peanut butter!
I stumbled upon these truffles entirely by accident, which is how many good things happen in the kitchen! These 3-ingredient Dark Chocolate Peanut Butter Truffles are a little too good to be true. You can eat BOTH truffles, shut down cravings (unsweetened cocoa powder does that), and get your chocolate fix ALL for only 50 calories.
If you're put off by the serving size here ("TWO TRUFFLES?"), allow me to explain. While I could scale the recipe to make enough to feed a crowd, a lot of the ladies I work with love something small and sweet that won't be tempting them from the kitchen for days. Make enough to satisfy you (two of these is perfect!), enjoy, and move on.
I'm often impatient when it comes to things like truffles, so I made one big ugly one instead of two small adorable ones. Behold, the mother of all truffles:
Yield 2 truffles
2 Tbs “Just Great Stuff” Chocolate Powdered Peanut Butter
1-2 tsp. Unsweetened Cocoa Powder, or to taste, plus more to roll the truffles in
1 Tbs water
Combine powdered Choco-PB, cocoa powder, and water, and stir until it comes together and starts to look like dough. (Add a little more dry ingredients if your truffle mixture isn’t coming together.)
Take half the truffle mixture and roll into a ball using clean hands, then roll in unsweetened cocoa powder. Repeat with remaining mixture.
