As if you needed one more reason to order a bag of Flapjacked Protein Baking Mix: now you can use it to make homemade protein donuts! (How did I miss this?! I feel like I let you down lol...) I discovered this recipe on the back of the bag for their Cinnamon Apple Baking Mix. They are just as delicious as those apple cider donuts you get at farms in the Fall, but lower in carbs and fat, and higher in muscle-building protein.
This gluten-free Blueberry Clafoutis ("clah-FOO-tee") is a lightly-sweet version of the classic French dessert, which is based more on a crepe batter than a cake batter. The finished product is a berry-studded custard with an eggy bounce to it. (Yes, the finished cake has a little "spring" to it!) Cherries are traditional in this cake, but fresh berries of any kind will work, as will thinly sliced pears, plums, apples, or cranberries.
Before heading to the gym this morning, we hit up Starbucks for some coffee (for me) and green tea (for him). I saw one of the baristas restocking the pastry case with thick yellow slices of pound cake. You know the ones: it's the sickeningly-sweet Starbucks' Iced Lemon Pound Cake, and it's 470 calories per slice according to the little warning sign in the pastry case.
"I wonder if I could make a cleaned-up version of that pound cake..."
