Protein Parfait

This quick, high-protein snack idea is inspired by an on-the-go treat I used to buy from The Fit Station, a healthy meal prep service in Greensboro, NC. Sadly, Fit Station went out of business - but this genius little recipe lives on. 

I loved their idea of a high-protein, dessert-inspired yogurt that was way lower in sugar and had higher quality ingredients than the rows of weird yogurt at the grocery store.

 

 

Recent moment of horror: there is an entire WALL of the refrigerated section at SuperTarget here in Durham devoted solely to yogurt. Apparently people love yogurt? I just get the basic 2% Fage Greek yogurt - unsweetened, natch - and call it a day, y'all.

This recipe is stupid easy and endlessly versatile. You can swap out the flavor of protein powder you use and add loads of different mix-ins for a new flavor combination. Example: omit the fruit and walnuts we use here and stir in 1-2 Tbs. of PB2 + a sprinkle of dark chocolate chips. YAS.

Serves 1

INGREDIENTS

1 container Fage 2% Greek yogurt

2 scoops Tera's Whey Organic Bourbon Vanilla protein powder*

1/4 tsp. vanilla extract

10 g. raw walnuts, chopped

1/2 c. blueberries

2 Tbs. peach puree (a handful of chopped fresh peach would be fine, too)

DIRECTIONS

1. In a medium-sized mixing bowl, combine Greek yogurt and protein powder. Stir until combined and smooth. (There should not be any sign of protein powder!) Add vanilla extract and stir again.

2. Transfer protein yogurt into a serving dish or bowl. Top with peach puree and sprinkle with chopped raw nuts and blueberries. 

Serve chilled.

MACROS: 362 calories - 21 g carbs/12 g fat/43 g protein 

COOK'S NOTE: We have only tried this recipe with whey protein powder (both Tera's Whey and About Time.) Since there are only a few ingredients here, the quality and taste of the protein powder you use matters a lot. Be sure you have good protein powder that dissolves well when mixed and that you genuinely enjoy its flavor!
