Slow Cooker Chicken Fajitas

A little stressed about starting a new job? 

No problem. Do what Coach Alaina does:

Buy a ton of ingredients, invite your girlfriends over (tell them to bring ingredients too), and cook a whole MESS of food to last you the entire week. 

We think getting in the kitchen and cooking healthy eats with friends is like therapy - only more delicious and way more fun. :) 

This recipe from Alaina was part of a recent weekend cooking binge in which she cooked enough food to feed a small army before starting a new job. When she posted a photo showing her final efforts on our Facebook page, well - you guys kind of flipped out a little and asked for ALL THE RECIPES.

So here you go! The first of several recipes that you can cook on a weekend to feed you (and your fam) for several days. 

COOK'S TIP: Use this shredded chicken as your protein to top a BAS (Big Ass Salad) or serve it up fajita style for a Tex-Mex inspired dinner with sides of black beans, guacamole, salsa, etc. 


Special Diets: dairy-free, gluten-free

Serves 6-8

INGREDIENTS

6 boneless, skinless chicken breasts

3 peppers, any color, cut into 2” strips

1 large yellow onion, cut into 1” half circles

4 Tbs. apple cider vinegar

3 Tbs. water

¼ c. Trader Joe's Chili Lime Seasoning*

½ tsp. sea salt

*NOTE: If you don't have a Trader Joe's near you, here's a recipe for DIY Healthy Fajita Seasoning from Wellness Mama that contains the exact same spices you'll find in many seasoning mixes!

DIRECTIONS

1. Layer all ingredients into slow cooker, starting with the chicken.

2. Cook on high for 5 hours or low for 8-10 hours.

3. Once cooked, shred chicken with two forks.
