I've made this so many times that I have to share it! I hated broccoli for years because all I knew was flavorless, mushy steamed broccoli. This is not that.
It's steamed broccoli you actually WANT to eat.
2 bunches broccoli (about 2 pounds), cut into small pieces
1-2 Tbs. unsalted butter
2-3 cloves garlic, minced
1/4 tsp. salt + freshly ground black pepper
1. Fill a large saucepan with 3-4" of water. Add a pinch of salt and bring to a boil.
2. Add broccoli and blanch until crisp-tender, 2 to 4 minutes. Drain in a colander and set aside.
3. In the same saucepan, reduce the heat to low. Add butter and garlic to the saucepan and cook until the garlic is fragrant, about 30 seconds. Add salt and a few grinds of pepper.
4. Return broccoli to sauce pan and toss with tongs. Season to taste with more salt and pepper if needed.
