Alaina's Pumpkin Protein Peanut Butter

Looking for an alternative to those expensive specialty nut butters that are all the rave online? Dessert-inspired flavors with whey protein mixed in AND a hefty price tag? Coach Alaina was busy in the Fat Loss Foodie test kitchen this weekend whipping up a homemade version of high-protein flavored nut butter that is WAY easier on your wallet!

INGREDIENTS

2 1/2 c peanuts, unshelled
2 tbsp coconut oil
2 tbsp local honey
1 c canned pumpkin
1 scoop vanilla Les Mills Good Protein
1 tsp vanilla extract
1 tsp pumpkin pie spice
1/2 tsp ground cinnamon
2 tbsp ground flaxseed
2 tbsp chia seeds 

DIRECTIONS

1. In a food processor, pulse peanuts until crumbly. Add coconut oil and honey and blend until smooth. 

2. In a medium bowl, combine all remaining ingredients. 

3. Add peanut mixture to pumpkin mixture. 

EAT! Yes it is that simple. And the total cost was under $8 for 15oz yield.
